What is cast iron and why use it?
There are a variety of materials used to make cookware – stainless steel, all-clad and multi-clad material that encapsulates one material between two layers of another; aluminum – Teflon coated and hard anodized and some more…. However, one name certainly stands out among the others.
Almost a synonym for durability,cast iron is like a Brunswick stew of metals – formed using pig iron, scrap iron and steel. Though some people advocate simply wiping off cast iron cookware after use, washing them with a stiff brush using hot water helps. Drying immediately prevents rusting and a thin layer helps season it for the next use. Television Chef Alton Brown suggests scouring the cookware with coarse salt and a paper towel or a clean rag.
