What is cast iron and why use it?

There are a variety of materials used to make cookware – stainless steel, all-clad and multi-clad material that encapsulates one material between two layers of another; aluminum – Teflon coated and hard anodized and some more…. However, one name certainly stands out among the others.

Almost a synonym for durability,cast iron is like a Brunswick stew of metals – formed using pig iron, scrap iron and steel. Used for cooking for hundreds of years, cast iron’s ability to withstand and maintain very high cooking temperatures makes it a common choice for searing or frying. Its excellent heat retention and diffusion makes it a good option for long-cooking stews or braised dishes. A stick-resistant coating is developed on a seasoned pan created by polymerized oils and fats and this “non-stick” surface and this is an added advantage as well.
